I’m always looking for new crock pot recipes and have been meaning to make these for quite some time. I loved the fact that the potatoes were ready when I got home from work. All I had to do was throw some steaks on the grill, make a quick salad and dinner was done in less than 20 minutes. The potatoes come out with a deeper yellow color when cooked in the crock pot but they taste just like they do in the oven and the clean-up is quick and easy. Top with your favorite fixins!
And since so many are asking, although I have and love my Instant Pot, I still love my slow cooker! I have the 6 Quart Hamilton Beach Set ‘n Forget Programmable Slow Cooker (affil link). I love it because you can adjust the time you want it to cook, and it automatically turns to warm when it’s done. It also has a probe for meat that automatically shuts off when done. I hated my old crock pot, it burnt everything and my food had a weird taste. This slow cooker is so great, I actually own several!

Ingredients
- 4 medium russet potatoes
- aluminum foil
- Toppings, extra pts: light sour cream, fresh chives, bacon bits, broccoli, cheese
Instructions
- Wash and scrub potatoes until clean.
- Dry thoroughly.
- When dry, prick potatoes with a fork and wrap in aluminum foil.
- Cook on low for 8 hours or on high for 4.
